We are continuing our way through our index card series (recipes written on index cards that have been handed down in my family over generations) and today is my mom’s coffee cake recipe. We call her Mimi now since that’s what my boys named her!
The only thing I adjusted about this one is the amount of cinnamon sugar mix (doubled it so that you get more bites of cinnamon sugar throughout the cake) and I added a glaze to the top just for fun. I love how easy these old family recipes are that make the tastiest bites. We all devoured this one – the boys would request this for breakfast, after school as a little treat, and sometimes they would choose a piece of this for dessert over their usual ice cream. So it’s safe to say, it’s a good one!

Mimi’s Coffee Cake

Cinnamon Crumble
- ½ cup brown sugar
- 2 tsp ground cinnamon
- 2 tbsp all-purpose flour
- 2 tbsp melted butter unsalted
- ¼ tsp salt
Cake
- 1 egg
- ½ cup whole milk
- 2 tbsp vegetable oil
- ½ cup sugar
- 1 cup all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
Glaze
- 1 cup powdered sugar
- 2 tbsp milk
- ¼ tsp vanilla
Preheat oven to 375 degrees. Grease an 8×8 baking dish and line with parchment paper.
In a small bowl, beat egg and milk. Add oil and whisk until combined.
In a separate bowl, mix together dry ingredients. Add wet ingredients to dry and mix until well combined.
Pour half the batter into prepared baking dish and top with 1/3 of the crumble topping. Add remaining batter on top and sprinkle remaining crumble evenly on top. It won’t seem like a lot of batter, but I promise it will rise and get nice and fluffy during baking!
Bake for 30 minutes or until an inserted toothpick in the center comes out clean. Let cool on wire rack.
Combine glaze ingredients in a small bowl and drizzle over the top of the cooled cake. Cut into squares and enjoy!!
