Happy October! Happy fall! And happy pumpkin flavored everything season.
This pumpkin sausage pasta is one of our absolute favorites and the boys request this meal at least once per week this time of year. We like to serve some toasty, buttery, garlicky garlic bread alongside this dish and somehow we never get tired of devouring it. I say it serves 6 people, but we’ve been known to finish the entire pan in one sitting as a family of four! Don’t judge – it’s that good. 🙂

Pumpkin Sausage Pasta

- 1 medium yellow onion sliced
- 3-4 garlic cloves smashed + peeled
- 2 tbsp extra virgin olive oil
- 1 can pure pumpkin
- 1 tsp salt
- ¼ tsp black pepper
- 1 tsp ground cinnamon
- 1 cup whole milk
- 1 lb mild italian sausage (or 5 links) casing removed
- 1 tbsp maple syrup
- ¼ cup parmesan cheese grated
- 1 lb rigatoni pasta or pasta of choice
- chopped fresh basil for topping
- additional grated parmesan cheese for topping
Heat a large, deep skillet, or dutch oven, over medium-high heat. Add 1 tbsp of olive oil and saute onions and garlic until softened and carmelized, about 20-25 minutes.
Meanwhile, bring a large pot of salted water to a boil and cook pasta according to package directions for al dente. Drain and set aside.
Remove the onions and garlic from pan and place into a food process or blender. Add the can of pumpkin, salt, pepper, cinnamon, and 1/2 cup of the milk. Process until mostly smooth.
In the same skillet you cooked the onions in, heat the remaining tablespoon of olive oil over medium-high heat. Break the sausage links into small pieces by hand and add to the pan.
Once the sausage is cooked through, add your pumpkin mixture to the skillet and mix in the remaining milk, maple syrup, and grated parmesan cheese. Stir until fully combined and let cook on low for about 10 minutes.
Add the cooked pasta to the skillet and stir gently until coated and combined.
Serve immediately topped with additional grated parmesan cheese and chopped fresh basil, if desired. We also like to serve this with some hot and toasty garlic bread! Enjoy!
