Puff Pastry Bites with Goat Cheese, Honey + Thyme

Equipment

  • 1 baking sheet
  • parchment paper

Ingredients

  • 1 sheet frozen puff pastry thawed
  • Balsamic vinegar
  • 1 Shallot thinly sliced
  • Salt
  • 4 oz Goat cheese
  • Honey
  • Fresh thyme leaves
  • 1 Egg beaten
  • Balsamic glaze

Instructions

  • Preheat oven to 375℉. Line a baking sheet with parchment paper.
  • Roll out puff pastry sheet onto a lightly floured surface and cut into 6 rectangles. Place each rectangle onto the baking sheet.
  • Leaving a 1/4” border, make a rectangular slit in each pastry.
  • Brush or drizzle the entire rectangle with balsamic vinegar.
  • Lay the sliced shallots over the smaller rectangle and sprinkle with salt.
  • Fill the center rectangle with goat cheese, drizzle with honey and sprinkle fresh thyme leaves over the top (Don't worry if you go over the slits with your ingredients, you can't mess this up!)
  • Brush the edges of each puff pastry with egg wash.
  • Bake at 375℉ for 18-20 minutes, until the pastry is golden.
  • Remove from oven and drizzle balsamic glaze over each puff pastry.
  • Enjoy!
